Sweet Kale Salad with Elderberry Yoghurt Dressing

I was recently gifted a bottle of Vitalite Sureau 100% pure Elderberry Juice.…  Little did I know the Elderberry is an antioxidant powerhouse!  This little berry has a very high ORAC score (oxygen radical absorbance capacity) – twice as much as blueberry and cranberry!

Elderberry juice doesn’t have a particularly sweet taste, and other than adding a splash to my husband’s morning smoothie, I wasn’t too sure what to do with it.    So I started experimenting and came up with this Sweet Kale Salad with Elderberry Yoghurt Dressing.  This satisfying salad serves up a mighty antioxidant punch that is perfect as a light summer lunch!

Creamy Rice & Lentil Salad

The weather in Montreal has been beautiful lately and at my house we’ve finally started to use our BBQ to  grill up all kinds of awesome plant-based dinners.  To compliment the grill I’ve been making various light summer side dishes – such as this Creamy Rice & Lentil Salad.

This salad is a great accompaniment to your veggie burgers, BBQ tofu, or my family’s favourite – BBQ quesadillas (that’s another recipe for another day!).

I love to make a big batch of this salad, as it keeps well in the fridge and serves well as a quick lunch throughout the week.

Red Summer Salad

Summer is officially here and this got me thinking about (and craving) fresh veggies, fruit, and (of course) salads.   Our Red Summer Salad delivers on all of these  – Think earthy beets, sweet watermelon and grapes tossed in a zesty lime and mint dressing.

Bursting with nutrients and flavour, you could easily build a meal around this salad by adding a dollop of fresh cashew cheese, or a side of BBQ grilled tofu.  This is how we like to eat – simple, fresh, and plant-based!

Serve this dish along side your summer favourites this Canada Day weekend (or July 4th for our readers State side)
