Our Easy Creamy Hummus Pasta is the perfect use-whatever-you-have-in-your-fridge meal. Best part is dinner will be on the table in under 30 minutes. We used portobello mushrooms and zucchini but you can easily change it up to suit your tastes (and your items on hand).

Vegan Scalloped Sweet Potatoes With Crispy Kale

Just another cloudy, cold spring day. Where is the sunshine you ask? In my dinner for tonight! My body needs that warm comfort food to make it feel… well, warm and comfy just like sun on a spring day.

Our Vegan Scalloped Sweet Potatoes with Crispy Kale are divine! The combination of sweet potatoes, celery root and onion – topped with our delicious cauliflower cashew Vegan Creamy White Sauce  – to provide a hearty and nutritious meal. As previously noted, celery root, a.k.a celeriac, is not the most attractive root vegetable, but it is a great source of vitamin K, dietary fiber and other vital vitamins and minerals. Not only that, celery root adds a sweet and smooth celery flavour.

Peas in a Pot

Day 3 of HEARTY STEWS brings you a thicker, heartier version of pea soup making it more stewy rather soupy. Semantics aside, we can tell you our Peas in a Pot is awesome! Loaded with protein and fiber, this dish can really help cleanse the system. For added simplicity and ease, all you have to do is throw the ingredients into the crockpot and it will take care of the rest.
