Chocolate SunButter Torte

There hasn’t been much action on the blog in many weeks.  The back to work and back to school season really took over, and now the Holidays are already upon us!   There’s no better time to share a new vegan dessert recipe than this festive time of year… whether you’re planning your Christmas of New Years menus, or whipping up some plant-based treats for your child’s school Holiday Potluck (as I am) – this Chocolate SunButter Torte recipe is a keeper.

I originally planned to make this a classic Peanut Butter Torte, but decided to give SunButter a try, as it’s made from sunflower seeds and therefore school-safe.   As soon as I’m done writing this post, I’ll be sharing this decadent treat with the kids and parents at my son’s school Christmas Show… fingers crossed they (and you!) love it as much as I do!

Coconut Apple Crumble

It’s that time of year again when local apples are I’m abundance.   As a family we’ve already been apple (and pear, and plum!) picking three times this season, and my son just brought home another bag of beautiful apples from his school’s field trip to Quinn Farm.  Needless to say, I have more apples (and pears, and plums!) than I know what to do with.

So yeah, it’s that time of year again… Apple crumble time!!  Our Coconut Apple Crumble recipe is vegan as always, and with a coconuty twist.  Enjoy!

Classic Vegan Birthday Cupcakes

Yesterday was my son’s 3rd Birthday (how time flies!)  As part of our celebration we prepared these Classic Vegan Birthday Cupcakes to share with the kids and educators at his school (daycare).    These dairy-free, egg-free, nut-free cupcakes bake up light, moist, fluffy, with just the right touch of sweetness – and they are school-friendly of course.

We topped these cuties with a simple vanilla cream icing and sprinkles for the kids.  Needless to say – the kids (and adults!) happily gobbled them up!

Creamy Cocoa-nut Cashew Pie

Weekends are for sweet treats, and our Creamy Cocoa-nut Cashew Pie is sure to please!   Inspired by‘s Dr Gregger’s Birthday Cookies ‘n Cream Pie – this dreamy and decadent dessert is made with wholesome plant-based ingredients such as raw cashews, almonds, cocoa powder, coconut, and sweetened with the goodness of dates.

Chocolate Covered Peanut Butter Balls (GF & V)

For our final day of our 5 Days of Holiday Balls we present you with a classic peanut-butter chocolate ball. Think Reese’s Pieces meets all natural goodness. Crunchy rice cereal, coconut, ground flaxseed and peanut-butter create a crisp interior which is rolled and dipped in chocolate then stuck in the freezer for a truly mouthwatering – but healthy – dessert ideal for any holiday party. Not a chocolate lover? No problem. This little ball can be served up without the chocolate and is equally (well almost) satisfying.
