Chocolate Chip Zucchini Mini Muffins

We’ve been taking a bit of downtime and haven’t been posting as much as of late – but we’re happy to be back this week with a new recipe to share!

Healthy… Moist… delicious… are the words I would use to best describe our Chocolate Chip Zucchini Mini Muffins… chock-full of cranberries, raisins, chocolate chips and Zucchini (of course!)

Zucchini blends very well into a variety of bakes good and adds nice moist texture to low fat recipes.  My vegan kiddos love their veggies but I’m still always looking for new ways to add even more to their diet – because there’s no such thing as too many veggies!  So eat up!

Tofu Scramble Breakfast Bagel

For the mornings you wake up and feel like a hearty and protein-packed breakfast, look no further than our Tofu Scramble Breakfast Bagel.  The tofu is scrambled, just as you would an egg, to which we add some of our Vegan Creamy White Sauce and extra nutritional yeast to give the same taste and texture as a traditional egg scramble.

Toast your favourite bagel and build your breakfast sandwich with layers of your favourite topping… we particularly enjoy  CHAO slices, avocado, and a little Sriracha sauce for a kick.

Morning Matcha Waffles

Good morning all!  Did you know that Matcha isn’t just for lattes?  This finely ground powder of special Japanese green tea leaves is a great addition to baked goods and other tasty delights… such as our Morning Matcha Waffles.    

For this quick and easy recipe we blend creamy dairy-free yoghurt, apple sauce, and matcha powder into a simple waffle batter that cooks up light and crispy on the outside and fluffy and moist on the inside.

So the next time you’re thinking of whipping up a batch of waffles, and would like something a little different than the usual, give this recipe and try… and do let us know what you think!

Chocolate Orange Vegan Griddle Cakes

What does the orange say to the chocolate? Orange you glad to see me?

Jokes aside, a tall stack of our Chocolate Orange Vegan Griddle Cakes would be a happy delight for anyone to wake up to.   Yes, dessert for breakfast is what we’re serving up today!   There’s not much that can beat the combination of decadent chocolate and fresh oranges served up warm in the morning.

Our Chocolate Orange Vegan Griddle Cakes are hearty, moist and satisfying on so many levels! When you’re craving dessert for breakfast, this is the recipe for you. Serve along side your favorite fruit and top with maple syrup… or dare we suggest chocolate sauce! (Ok that would just be overkill!)

Zesty Sunshine Oatmeal Muffins

We recently discovered Patience Fruit & Co, a Quebec-based company and brand producing some extraordinary cranberry products; all organic, and all delicious.    We especially like their new line of artisan snack blends, which bring together cranberries, berries, nuts, seeds and fun spices.   We were inspired to include some of their delicious products into some of our vegan recipes… So we bring to you our Zesty Sunshine Oatmeal Muffins.
