5-Minute Vegan Pancakes (GF)

It’s Monday morning. The mad-rush has begun yet again and as you scramble to shower, dress, and drink anything with caffeine in it, the classic lines runs through your mind, “It’s just another manic Monday/ Ohhh -ooo-ohhh/ I wish it were a Sunday/ Ohhh-ooo-ohhh.” The Bangles captured it best.
