Perfect Almond Flour Pancakes

You’re probably thinking: Not another pancake recipe! True we’ve been on a bit of a breakfast kick, but with young children at home, having something that is quick and easy and healthy in the morning is essential to your survival. Which brings us here… To these delicious Almond Flour Pancakes that take only 5 minutes to whip up and another 5 to cook. They are everything a pancake should be: light, fluffy, sweet but not too sweet. Oh and they are gluten-free for anyone with gluten sensitivity or an allergy. Have them as is or add in blueberries, raspberries or applesauce and cinnamon for some variety. Enjoy!

Quick and Easy White Bean Salad

My husband, who would have never before eaten let alone enjoyed a bean salad, loved this simple yet flavourful recipe. Using fresh ingredients, our Quick and Easy White Bean Salad is a perfect dish for those hot summer days when you need something satisfying and refreshing. Best part is you can whip it together in under 10 minutes! It keeps very well so you can easily make it ahead of time and keep refrigerated until serving.

Almond Butter Blueberry Pancakes

Classic Vegan Birthday Cupcakes

Yesterday was my son’s 3rd Birthday (how time flies!)  As part of our celebration we prepared these Classic Vegan Birthday Cupcakes to share with the kids and educators at his school (daycare).    These dairy-free, egg-free, nut-free cupcakes bake up light, moist, fluffy, with just the right touch of sweetness – and they are school-friendly of course.

We topped these cuties with a simple vanilla cream icing and sprinkles for the kids.  Needless to say – the kids (and adults!) happily gobbled them up!

I always need a quick chocolate fix so these 3 Ingredient Energy Bites are the perfect snack. All you need is 5 minutes and 3 ingredients and you are ready to go!
