Chocolate Hemp Energy Oat Bars

My family and I are big into convenience when it comes to snacks…  Whether we’re in-between swimming lessons, school drop-off, work meetings, post-workout, etc. – we usually have a snack bar on hand in case we need a quick refuelling.   We’re lucky to have some fairly healthy and wholesome pre-packaged bars available at our health food store or online, but nothing can beat these homemade Chocolate Hemp Energy Oat Bars.

These quick and easy bars are made with wholesome ingredients such as rolled oats, Sunbutter, hemp hearts, and dairy-free chocolate.   I look forward to having one of these after a good workout!  So satisfying and delicious with a great mix of carbs, plant-based protein, and healthy fats.   These are kid approved as well, and since they are made with sunflower seed butter they are school safe – so throw them in a lunch box as a healthy snack time “treat”.

Green Bean Chickpea Salad

Green beans are in season here in Quebec. This weekend, I took my girls out to the farm to pick their own beans. It is no wonder why there is such a movement “from the garden to the table” or macrobiotic diets that focus on locally sourced food. These green beans were crunchy, tasty and a far cry from the cardboard texture and dull flavour that we find in the grocery store in mid-January.

My girls loved being a part of this creation and picking the beans not only helped them develop an understanding of how our food arrives on our plate but it also deepened their connection to what was on their plate.

This Green Bean Chickpea Salad is a light side dish very fitting for these warm summer days. It can be served warm or cold – my preference is cold the following day once the beans have really absorbed all the flavours – and is a great dish to make ahead of time. Enjoy! WARNING:  This High Performance Plant-Powered Shake is NOT for the faint of heart. This is my go-to morning shake recipe that is formulated to provide all the energy and building blocks needed for the serious endurance athlete looking to fuel and recover from their intense workouts.

Ok… I might be laying it on a little thick… To be honest, I came up with this shake recipe for my hubs (Michael), who’s an athlete but also a bottom-less pit that needs a crazy amount of energy to fuel even his body’s most basic needs, let alone his workouts!   This morning shake recipe initially started out rather simply, but has evolved over time into a powerhouse of plant-based superfoods that our morning routine cannot go without.  So for all the people in Michael’s office who see him slurping these down each morning and are wondering what on Earth is in there… Now you know!

Oh, and don’t judge a shake by it’s colour… this shake actually tastes GREAT, and is probably one of the most nutritious meals you can start your day off with.    Check it out!


Wild Rice Mushroom Medley with Smoky Tempeh

If you haven’t yet cooked with tempeh I would highly recommend it. Like tofu, tempeh is a derived from soybean; however, it undergoes a fermentation process and retains the whole soy bean making it a higher source of protein and fiber (source). From a cooking perspective, tempeh is very versatile. Its texture resembles a vegetarian burger patty which means you can bake it, steam it, or fry it up. Anything goes with this plant-based protein source!

Our Wild Rice Mushroom Medley With Smoky Tempeh is a great starter recipe for those looking to try tempeh for the first time or a unique dish for those who may want to expand their tempeh recipe repertoire. We used pre-marinated strips of tempeh for the sake of time (sometimes with two young children at home you have to cut corners), but you can also create your own marinade using key ingredients like maple syrup and liquid smoke. The brand now calls these strips “fakin’ bacon” because they really do taste like bacon – my husband was thrilled!

Sweet Kale Salad with Elderberry Yoghurt Dressing

I was recently gifted a bottle of Vitalite Sureau 100% pure Elderberry Juice.…  Little did I know the Elderberry is an antioxidant powerhouse!  This little berry has a very high ORAC score (oxygen radical absorbance capacity) – twice as much as blueberry and cranberry!

Elderberry juice doesn’t have a particularly sweet taste, and other than adding a splash to my husband’s morning smoothie, I wasn’t too sure what to do with it.    So I started experimenting and came up with this Sweet Kale Salad with Elderberry Yoghurt Dressing.  This satisfying salad serves up a mighty antioxidant punch that is perfect as a light summer lunch!

Peanut Butter Hemp Granola


In line with Chantal’s recent post about where to get protein, this recipe offers a solid amount to help you get your day started on the right foot. By combining peanut butter and hulled hemp seeds, you can take your granola to the next level.

Our Peanut Butter Hemp Granola makes the perfect breakfast, snack or dessert. The recipe contains at least a whopping 113 grams of protein (10 grams per 1/4 cup serving) and can be customized to suit your tastes. I love adding dried cranberries for my breakfast batch and chocolate chips when I am craving something sweet. Serve with coconut or almond yogurt, or – my personal favourite – a splash of almond milk. Dress it up with some fresh berries or banana slices et voilà; you have yourself a complete breakfast that will leave you feeling satisfied for longer.
