I work in a school environment and wanted/needed a hearty snack that could replace my almond obsession. At 3:00 I get this hunger that is insatiable, like my body knows I need to refuel. A day working with little people, lots of little people, really helps you work up an appetite. So I wanted something that would fill me up and get me through the day.
That’s when these Nut-Free Power Balls were born. A delicious nut-free, protein-filled snack that are school friendly. These are a very healthy, all natural alternative to granola bars. Best part is… they actually fill you up. Whether you are training, running after little ones or just plain hungry, this snack will do the trick. So go on and give them a try! You will not be disappointed.
1 c pumpkin seeds
1 c unsweetened coconut
1/2 c pitted Medjool dates (about 8)
1/2 c raisins
1/4 c chia seeds
1/4 c Hemp Hearts
1/2 c tahini (or more as needed)
- Put all ingredients in blender.
- Blend until well mixed.
- Taste and adjust accordingly. You may need more tahini to help bind the ingredients together or perhaps more sweetner (I’ve been known to add a splash of maple syrup now and then).
- Roll into balls or bars, and wrap for a filling, nutritious snack.
