Easy No-Bake Oatmeal Flax Cookies

Wednesday a.k.a hump day. Looking for a little pick-me-up? How about a peanut-buttery, chocolatey yet still healthy pick-me-up? Ding, ding, ding!! We have a winner.

These Easy No-Bake Oatmeal Flax Cookies are the perfect fix for your dessert craving. Just as the name suggests, they are quick and easy to make for a simple sweet treat you and your children can enjoy.

Serves: 24 1-inch balls
Prep time: 5 minutes
Cook time: 5 minutes
Chill time: 5 minutes

Ingredients:

1/2 c peanut-butter
1/2 c maple syrup
1 Tbsp vanilla
2 Tbsp coconut oil
1/4 c unsweetened coconut/almond milk
2 c quick-cooking oats (gluten-free if desired)
1/2 c ground flax
1/8 c cocoa

Steps:

  1. Over medium heat, add peanut-butter, maple syrup, vanilla, coconut oil and coconut/almond milk to a medium sized sauce pan.
  2. Stir continuously until mixture begins to bubble and has acquired a smooth texture.
  3. Remove from heat and stir cocoa then the oats and ground flax.
  4. Form small balls and allow to cool on a piece of wax paper. Enjoy!
