5-Minute Vegan Pancakes (GF)

It’s Monday morning. The mad-rush has begun yet again and as you scramble to shower, dress, and drink anything with caffeine in it, the classic lines runs through your mind, “It’s just another manic Monday/ Ohhh -ooo-ohhh/ I wish it were a Sunday/ Ohhh-ooo-ohhh.” The Bangles captured it best. Monday morning.  Sigh. But what if Monday didn’t have to be so bad after all? What if you could have mouth-watering, healthy, gluten-free pancakes in 5 minutes?! Ding, ding, ding! We have a winner.

Our 5-Minute Vegan Pancakes have only six ingredients. They are quick and easy to make in your blender, and absolutely delicious! Naturally sweetened with banana and dates, they are great as is or with fresh fruit. Was that a smile?

Serves: 12 pancakes (3 inches in diameter)
Prep time: 5 minutes
Cook time: 10 minutes


1 c gluten-free quick cooking oats
1/2 c gluten-free flour
1 Tbsp baking powder
1 banana
1 c almond/coconut milk
1 tsp vanilla (optional)
3 Medjool dates or 1 Tbsp coconut palm sugar



  1. In a high-speed blender, process the oats until ground into a flour. Add flour, baking powder and dash of sea salt and blend once more.
  2. Add banana, vanilla, almond/coconut milk and dates. Blend until you have a smooth batter.
  3. Heat skillet on medium-low temperature. Add a bit of coconut oil and pour batter into pan. Cook until lightly browned then flip.
  4. Enjoy with fruit, maple syrup or just as is.

    1. Thanks for reaching out catday611. The non-vegan recipe I used to make called for 3 1/2 tsp of baking powder which is why I used 1 Tbsp (or 3 tsp) in this recipe. Although I haven’t had the bitter taste before, I have read that some people are more sensitive to the sodium aluminum sulfate found in some baking powders. Perhaps try the recipe again with 2 tsp? If you do let us know how they turn out! Your feedback is appreciated!
