One-Bowl Vegan Banana Muffins

We kick-off our month of BREAKFAST BEAUTIESย with a week of muffins! Day 1 of MUFFIN MANIA features a quick, simple and oh so delicious recipe. Vegan or not, these muffins are a great staple for any household. Add vegan chocolate chips and you’ve got a wholesome treat. Our One-Bowl Vegan Banana Muffins are easy to make and provide a great snack or a breakfast on the go!

 

Serves: 10 large muffins
Prep time: 10 minutes
Cook time: 20-22 minutes

Ingredients

3 large ripe bananas
1 flax egg
1 tsp vanilla
3 Tbsp melted coconut oil
1/2 c maple syrup
1/4 c unsweetened almond or coconut milk
1 c all-purpose flour (or gluten-free flour blend)
3/4 c spelt flour (or gluten-free oat flour)
1 tsp baking soda
1 tsp baking powder
Sea salt
Vegan chocolate chips (optional)

Steps:

  1. Preheat oven to 350 degrees. Mix 1 Tbsp ground flax seed with 3 Tbsp of water and let sit for about 5 minutes.
  2. Meanwhile, mash the bananas and add vanilla, maple syrup, melted coconut oil and almond milk. I would recommend you warm the almond milk slightly so that the coconut oil won’t coagulate. Then add flax egg and stir.
  3. Add flour first and do not stir yet. Add baking powder, baking soda and sea salt on top of the flour. Mix it all together and for those of you with a sweet tooth like me, add some vegan-friendly chocolate chips.
  4. Bake for 20-22 minutes and enjoy!
