Kale Hemp Pesto

This little number is making her debut in our week of pasta main dishes because she is a colourful, creative way you can dress a pasta up and give it a healthy makeover. We like to use this as a base for our dish and top with whatever fresh ingredients we may have in the fridge. This pesto has it all! Almond and hemp seeds give added protein and fiber, nutritional yeast adds some of that much needed B-12 and kale provides vitamin C and rich antioxidants. Have fun playing around with the many possibilities!

Serves: about 2 cups
Prep time: 10 minutes

Ingredients:

1 1/2 c kale
1/2 c fresh basil
1 garlic clove
1/4 c nutritional yeast
1/3 c hemp seeds
1/4 c almonds
1 lemon juiced
A dash sea salt
1/3-1/2 c olive oil

Steps:

  1. Wash and trim kale and basil.
  2. Place everything except olive oil into a high-powered blender or food processor. Blend until relatively smooth being sure to scrape down the sides.
  3. Pour in olive oil while mixing until desired consistency is reached. Serve in pasta, sandwiches or over veggies.
