Next Level Pumpernickel Avocado Toast

Now that we have your attention, we’d like to let you in on a totally delicious recipe we’re really into these days: Next Level Pumpernickel Avocado Toast. The nutty flavour of a crusty, dark pumpernickel paired with delightful toppings such as smashed avocado, cucumber, pomegranate, and baby kale is absolutely scrumptious and nutritious. We finish off our toasts with a little squeeze of citrus and a cayenne pepper kick. Now this is what we call next level snacking!

Serves: 4
Prep time: 10 mins

Ingredients:

4 thick slices of Pumpernickel bread, toasted
1 ripe avocado
1/2 english cucumber, sliced
4 tbsp pomegranate arils
4 tbsp vegenaise
1 Tbsp nutritional yeast
1/2 tsp cayenne pepper
handful  of baby kale
1/2 fresh lemon or lime
sea salt and pepper to taste

Steps:

  1. Toast the bread slices
  2. Spread 1 Tbsp on vegenase on each toast
  3. Smash 1/4 of the ripe avocado per toast
  4. Layer on the slices of cucumber
  5. Sprinkle the nutritional yeast, sea salt, cayenne pepper
  6. Top the toasts with the baby kale, and pomegranate arils
  7. Finish off the toasts with a squeeze of fresh lemon or lime juice
