Papaya Fiesta Salad

Got the winter blues? Need a little pick-me-up? This salad will give you (and your tastebuds) a jolt of life. With it’s vibrant colours and tangy punch, this tropical blend of papaya, avocado and radishes tossed in a cilantro lime dressing will liven up your plate. Top with pumpkin seeds for some Omega-3 action and you have yourself a healthy lunch or starter you and your guests can enjoy. 

Serves: 4
Prep time: 10 minutes


5 c mixed greens
1 c papaya chopped
4-5 radishes sliced
1/2 c of cucumber
1 avocado sliced
1/4 c of pumpkin seeds
2 Tbsp cilantro

1 tsp ginger
1 garlic
3 Tbsp avocado oil
1 tsp maple syrup
1 Tbsp cilantro
1 lime


  1. Prepare vegetables: Wash and slice radishes, cucumber, and cilantro. Peel and cut papaya and avocado. Mince ginger and garlic for the dressing.
  2. Place mixed greens in a large bowl. Top with other vegetables.
  3. Whisk all the dressing ingredients together.
  4. Toss salad with dressing and serve immediately
