Not Chicken Soup for the Soul

A bowl of chicken soup is like a warm hug on a cold day.  Guaranteed to comfort you, and chase away a bad cold or even a bad day!  Adopting a plant-based diet doesn’t mean you have to give up on this simple pleasure…  Our Not Chicken Soup for the Soul is just as delicious, and you’ll take comfort in knowing it’s healthier and more compassionate than the original. Enjoy!

Serves: 6-8

Prep time: 15 minutes
Cook time: 20 minutes


8 c vegetable broth
2 large carrots, chunked
1/2 onion, diced
1/3 head of fennel with fronds, chopped
1 block of extra firm tofu, cubed
2 cubes of vegan “chicken” bouillon
1/3 c nutritional yeast
1 c baby spinach (optional)
Herbamare sea salt (to taste)
black pepper (to taste)


  1. In a large pot, bring vegetable broth to a boil, add in the cubes of vegan “chicken” bouillon.
  2. Add in the onion, carrots, fennel (save the fronds), and tofu, reduce heat and simmer until the vegetables are tender
  3. With a slotted spoon remove the chunks of carrot, and set aside
  4. With a fork, mash and break the carrot into pieces, add back to the broth
  5. Stir in nutritional yeast, salt, and pepper
  6. Continue to simmer for a few minutes
  7. Right before serving, add in the remaining fennel fronds, and optional baby spinach
