Simply Satisfying Miso Soup

For our week of soups we begin with a traditional Japanese miso soup. In Japanese culture, many people begin their day with a warm bowl as the miso (fermented soybean paste) wakes up the digestion system and invigorates the body. This uber simple soup takes little time to prepare but nourishes the body with protein, probiotics, and vitamins. Breakfast, lunch or supper, this soup is a staple in any diet. 

Serves: 4-6
Prep time: 5 minutes
Cook time: 10 minutes


3 scallions chopped
4 Tbsp Miso
4 c water
1/4 block of firm tofu cubed
1 Tbsp wakame or other type of sea vegetable
1/2 lemon (optional)


  1. Soak wakame in warm water.
  2. Chop scallions and tofu.
  3. In a large pot or Dutch oven, bring 4 cups of water to a boil. Add miso and stir. Add remaining ingredients.
  4. Serve hot with a squeeze of lemon.
